what's for dinner? chicken fajitas

Hi guys, I have not done a post in sometime now! I'm hoping to do some crafts this summer for you guys too ;) && now to the food. 

Here is my fajitas with everything on it. Hummus, grilled chicken, peppers, onions, shredded cheese.

 First, grill the chicken and add some chili powder, ground cumin, salt & pepper. We not have the luxury to have an outside grill in our apartment, so we have multiple sizes of George Foreman's. 


So, when the chicken is getting done, chop up 1 red pepper, 1 green pepper, and I did half an onion. It was such an easy meal, and oh my gosh, I outdid myself! YUMM!!

what's for dinner? shrimp linguine

Last night I made the quickest, most delicious dish. 


I really kind of threw these things together. So, don't hate me because I do not know measurements. 


  1. I used wheat linguine noodles, and started cooking those in my pasta boat.
  2. While those were cooking, I put a tablespoon of butter in a large saucepan and threw in leftover shrimp I've had in my freezer. You will need about 2 cups? I did about 4... I went a little crazy.
  3. When those were almost done, I added 1 cup of frozen peas. 
  4. After the noodles are done, I added them into the skillet.
  5. I finished the dish off with parsley, oil, and pepper.
The whole process took about 15-20 minutes! And it was amazing

what's for dinner? cheeseburger casserole

If you didn't think you could mix cheeseburger and a casserole, you would be wrong! YOU CAN


Recipe

2 cups rotini pasta
1 cp chopped scallions
garlic powder
1 lb of ground deer meat(you can use beef)
salt and pepper to taste
2 tbsp tomato paste
28 oz diced tomatoes
2 tbsp mustard
grated cheddar cheese
1/4 c chopped dill pickles

350 degrees for 20 minutes


  • Cook your meat, I use my micro cooker to cook my meat. 
  • Then, I use my pasta boat to cook my noodles. 
  • While my noodles are cooking I sprinkle some garlic powder onto my meat.
  • Pour your tomato paste, diced tomatoes, scallions, mustard, pickles, and meat into a big bowl. 
  • After the noodles are done mix everything together in the bowl. 
  • Pour your mix into a 9X12 dish.
  • Sprinkle cheese on top
  • Bake for about 15-20 minutes! Delish.

Morning! So, as you read yesterday I was snowed in. Thank goodness we have a grocery store right down the road to get dinner stuffs. TACO SALAD! This picture lists everything that you need for your taco salad. I used deer meat because we have so much of it. And chili beans!

what's for dinner? meatball pita

Good morning everyone! Wondering what's for dinner tonight? I've got just the thing. First, our freezer is FILLED with deer meat from my father, so I've been trying to make new things out of it. Then, came meatball sandwich. It is so easy to make, but may take awhile.

Need: 
1 pound of ground meat(hamburger, turkey, venison)
basil
breadcrumbs
shredded cheese
pita bread
marinara sauce
  • First, I mixed my deer meat with basil and then added breadcrumbs to be able to make it into small balls.
  • Add some oil into the skillet and fill it with meatballs
  • Let them brown on all sides and be sure they are fully cooked in the middle, this does take sometime. If you don't have time to stand at the stove, you can put them in a crock pot with marinara sauce.
  • After that, fill in the sides of your pita with marinara sauce. You may need to cut your meatballs in half to fit more in. 
  • Add more marinara sauce, and top it with cheese. YUM!

what's for dinner? shrimp dip

I'm suppose to be eating healthy... this is not eating healthy. I decided, to make this dip because I have a lot of shrimp in my freezer that I need to eat up. Therefore, shrimp dip. I tried to make it as healthy as possible.




Preheat oven 375 - spray 8x8 pan with cooking spray


  • 4 oz fat free cream cheese
  • 1/2 c reduced fat sour cream
  • 1/2 c of hot sauce
  • 5-6 c small diced precooked shrimp (I used 4 cups and I feel I needed more)
  • 1/2 c reduced fat Sargento Mexican shredded cheese
Combine first 3 ingredients, mix
Add 1/2 c cheese and shrimp, mix
Bake for 20 minutes
I added more cheese on top, and baked for other 5 minutes.

WARNING! VERY ADDICTIVE!

sushi date

Friday, I had a hot date. My two best girls and I went out to dinner for sushi and drinks!

My co-worker bought all us girls in the office a treat when she came back from a show. She got my a "headband" with a sequin bow on it. She thought of Hello Kitty when buying it for me. She knows me so well.

I am about a week behind on blogging. Sorry, let's start with last Tuesday 11-13. I made homemade pizza. My parents gave me a pound of pork sausage, it was the obvious thing to do with it. I did not make my own crust, even though I would like to try it sometime. We ate the whole thing!

chicky chicky tom tom

While I was at my parents Sunday running around with the kids. I left the boyfriend at home to watch the chicken I put in the oven. 

it was baked for about 5 hours on 275 degrees 

He was shredded, put on a hamburger bun, topped with bbq sauce and cole slaw. YUM!

The first of November kick started my diet, once again! It was addicting to eat. Only 4 points/serving in weight watchers


1 cup elbow pasta 
4 strips of turkey bacon
2 tomatoes
1 cup spinach
4 tablespoons fat free mayo
pepper

what's for dinner? cheesy potatoes and ham

I finally, got myself a crock pot(a purple one) 
Sunday I woke up, bought one and started cooking. 


Potatoes: I bought and cut 10 small potatoes.

Ham: I bought turkey ham Jennie-O brand.

Cheese: I wanted to make my own cheese sauce. When I was at the store, I could not find Velveeta to save my life. So, I bought cheese soup in a can.

Extra: I had some left over sour cream, about a half a cup that I added. A triangle of laughing cow cheese. And had left over green onions from my stuffed shells

what's for dinner? taco stuffed shell


How I made it:

  • I cooked hamburger meat first. I always use my micro cooker

  • Then I used my pasta boat to cook my jumbo shells. I made 14.

  • While my shells were cooking I added my taco seasoning to my meat. I make my own taco seasoning(TOP SECRET) you can use any store bought kind.

  • Next, I added 1/2 a cup of cottage cheese into the meat mix. (healthier than cream cheese)

  • I stuffed the shells with the meat mix. I put them in a tiny casserole dish. 7X11?

  • I topped them with salsa and taco sauce. Covered it with tin foil and put it in the oven. 350 degrees for 20 minutes.

  • Added taco cheese on top, uncovered it and cooked for another 10 minutes.

  • Chopped up some green onions and ate it with a little low fat sour cream!




It does take some time to make it. I think next time I will prepare it on the weekend and freeze it for the week!

pizza dip. tanks. skirt

yesterday us girls were going to do a little patio sitting, but it turned out to be a really cloudy day :| so instead I went to goodwill, did some grocery shopping, and made PIZZA DIP!
 my mother has made this dip before and it is delish.
 great for when you have people over. it was perfect because we had something to eat when we came home from the bar ;)


what to do:

you can either eat this cold or you can bake it, eat it with crackers or chips! in a bowl, mix the cream cheese,1/2 c sour cream, and a tsp of oregano. put this mixture into your pie tin. top it with pizza sauce, as much cheese, green pepper, and crushed red pepper as you like. I'm not much of an onion eater but my boyfriend loves them, so when the recipe calls for them I just use minced onion. bake it on 400 degrees for 15 minutes

             





I bought some shirts at Goodwill and cut them into razor backs. 
I'm ready for summer!

we needed wine glasses, $2.99! These earrings, which I love $.75! I needed a basket for Easter Sunday to bring my goodies for the fam. not sure how much it was!

I didn't take any pictures Satruday night, but I did get a shot of my outfit!

whats for dinner? - lasagna rolls

tonight for dinner I tried something I have never made before. I cannot remember where I got this recipe from, but it turned out better than I thought. 



you will need:

  1. 3 frozen chicken breasts
  2. 1 c. mozzarella cheese
  3. 1/2 c. feta cheese
  4. 1/4 c. parmesan cheese
  5. 1/4 c. milk
  6. I could fit 8 lasagna noodles in my pan
  7. and as much spaghetti sauce as you like. (I don't like much, my boyfriends like a lo)
how to make it:

I cooked my lasagna noodles in a pasta boat (I'm that person that will buy anything from an infomercial)  and I cooked my chicken in my micro cooker. I actually cooked my chicken first so it gave it a chance to cool down so I can chop it. then in a bowl stir together the mozzy, feta, parm cheese, and milk. lay down a noodle and put your mixture on top. then roll it up! after I made them all and put them in my pan I baked them for 10 minutes on 400 degrees. we topped it with more sauce, red pepper, and parmesan cheese. 

YUM!

what's for dinner? - philly cheese sandwiches


these are one of my favorite things to make. 
  1. because they are absolutely delish
  2. super easy to make!



a couple months ago I bought the best thing to ever happen to me...


microwaved hamburger?? YES! I will never go back to cooking meat in a skillet again.
 Anyways back to the recipe. 

Cook the meat (you can use hamburger, or last night I used pork) you can even put the meat in the cooker right out of the freezer, no need for water. microwave for 4 minutes. take it out and chop. 
put it back in the microwave for another 4 minutes. 
next drop in 3 cubes of beef broth and green peppers and chop it up some more, pop it in for another 4 minutes. 
it should be completely cooked through now!
 I like to use Oroweat onion buns for this recipe. 
pull off some of the bread on the bottom bun so the meat can sit in it. 
top it with a slice of provolone cheese. 
cook 350 degrees for 5 minutes, cook the top bun also.
 serve with southwest sauce, or my boyfriend ate his with taco sauce!

what's for dinner? - crab cakes

I loooove anything fish! crab cakes are one of my favorite things to eat and they are extremely easy to make. I call them "cakes" because I have a problem saying crab balls... don't worry I'm aware of my immaturity. Sorry I don't really have instructions for these because I don't measure, I'm just used to throwing everything in a bowl.

  • Ps. that is brown sugar in the mason jar
