whats for dinner? - lasagna rolls

tonight for dinner I tried something I have never made before. I cannot remember where I got this recipe from, but it turned out better than I thought. 



you will need:

  1. 3 frozen chicken breasts
  2. 1 c. mozzarella cheese
  3. 1/2 c. feta cheese
  4. 1/4 c. parmesan cheese
  5. 1/4 c. milk
  6. I could fit 8 lasagna noodles in my pan
  7. and as much spaghetti sauce as you like. (I don't like much, my boyfriends like a lo)
how to make it:

I cooked my lasagna noodles in a pasta boat (I'm that person that will buy anything from an infomercial)  and I cooked my chicken in my micro cooker. I actually cooked my chicken first so it gave it a chance to cool down so I can chop it. then in a bowl stir together the mozzy, feta, parm cheese, and milk. lay down a noodle and put your mixture on top. then roll it up! after I made them all and put them in my pan I baked them for 10 minutes on 400 degrees. we topped it with more sauce, red pepper, and parmesan cheese.

Last night my grandmother, mother, and I treated ourselves and got manicures and pedicures!
We always go to the place my mother gets her acrylics done. Top Nails inside Valley West Mall. They know her by name and always give us a kind greeting. (she is chatty, so they remember her) They always do an amazing job and don't cheat you on the massage. I usually always bring my own colors, but I didn't have the color I wanted. I would have liked a more neon look, but I had to compromise. We did a little shopping for granny, which I love doing. It's fun to dress her a little less grandma. After, we treated ourselves more with a beer and potato skins at TGIF. great day

--I would also like to add that while we were getting our toes done there was a woman getting her nails done right in front of us. We are a loud family and was probably causing some eye rolls while we laughed and chatted. At one point I made eye contact with the woman and she smiled politely at me. She was mid aged I would guess. After a while I glanced at her again and I could tell she was holding back tears. Her eyes were all red and she was sniffling. Oddly, I Immediately wondered if she had lost her mother recently and seeing our 3 generation of daughters made her sad?? Or maybe the man that was doing her nails poked her?? I don't know, but it made me very thankful for those 2 crazy women sitting next to me. God is good.

what's for dinner? - philly cheese sandwiches


these are one of my favorite things to make. 
  1. because they are absolutely delish
  2. super easy to make!



a couple months ago I bought the best thing to ever happen to me...


microwaved hamburger?? YES! I will never go back to cooking meat in a skillet again.
 Anyways back to the recipe. 

Cook the meat (you can use hamburger, or last night I used pork) you can even put the meat in the cooker right out of the freezer, no need for water. microwave for 4 minutes. take it out and chop. 
put it back in the microwave for another 4 minutes. 
next drop in 3 cubes of beef broth and green peppers and chop it up some more, pop it in for another 4 minutes. 
it should be completely cooked through now!
 I like to use Oroweat onion buns for this recipe. 
pull off some of the bread on the bottom bun so the meat can sit in it. 
top it with a slice of provolone cheese. 
cook 350 degrees for 5 minutes, cook the top bun also.
 serve with southwest sauce, or my boyfriend ate his with taco sauce!

SPRING IS HERE


 It was a beautiful day here in Iowa yesterday and instead of enjoying the great outdoors, I have been inside all day. Crafting that is. However, I did get to drive with the windows down on my way to Hobby Lobby!





I decided I needed some Easter/Spring decor to get into the season.

I usually make something unhealthy/delicious on the weekends!
I call this Peanut Butter Cereal Treats (clever right)
 I also made another duct tape rack for my boyfriends mom. She brought over a sample of her wall paper for me to match it. I found the perfect colors!
 Hope she likes it.

what's for dinner? - crab cakes

I loooove anything fish! crab cakes are one of my favorite things to eat and they are extremely easy to make. I call them "cakes" because I have a problem saying crab balls... don't worry I'm aware of my immaturity. Sorry I don't really have instructions for these because I don't measure, I'm just used to throwing everything in a bowl.
